Flour Dusting:
- Combine and mix Flour and Savoury Chicken and Pork Rub on a large plate
- in a medium size bowl mix milk and egg
Chicken Nuggets:
- Cut chicken into 1 inch strips and then into 2 inch lengths
- Chicken can also be left in 1 inch strips to make chicken strips
- Dust cut chicken one at a time in flour mixture to avoid any clumping, shake off any excess flour and set on second plate
Second Dusting:
- Dip cut chicken pieces in milk and egg mixture, as you remove them shake nugget a little and then dust in flour mixture, repeat until finished
Cooking:
- In a medium to large pot add canola oil and bring to a medium heat
- Have a sheet pan lined with paper towels ready
- Place several pieces of chicken in the pot with your tongs leaving space between chicken to allow for cooking.
- Cook until golden brown on both sides (you may have to flip them if the oil isn't deep enough). heat may have to be adjusted
- Place nuggets on lined sheet pan to absorb excess oil.
- Once all the nuggets have been fried remove paper towels from sheet pan and place in oven at 350 F for 5 to 10 minutes to warm them all back up.
Alternate Cooking method:
- Nuggets can be baked at 350 F 20- 30 minutes or until they are cooked through
Dipping Sauce:
All the sauces offered at Phil's Gourmet Sauces are excellent on the these tasty chicken bites. Kids love the Honey Apple BBQ Sauce, but my favorite is my Traditional BBQ Sauce.
