quesadilla's

Quesadilla's makes 6

 Calabacitas ( squash filling):

  • Cube zucchini, yellow squash, and dice red bell pepper and onion into a small dice. 
  • Bring skillet to a medium heat, add oil, zucchini, yellow squash, bell pepper, corn, onion, and Hike Up Your Skirt Fajita Rub. Saute for 10 minutes
  • remove from heat and mix in black beans. (black beans should be washed and strained or they blacken mixture)

Chicken:

  • Season chicken breast with Hike Up our Skirt Fajita Rub and grill or pan fry chicken in olive oil until thoroughly cooked
  • Dice chicken into 1/2 inch cubes or smaller
  • Mix filling and chicken together


Assembly:

  • This is just like making a grilled cheese sandwich if you have never made a quesadilla before
  • Warm Skillet to just below a medium heat
  • Place one flour tortilla on counter and layer in 3/4 cup of filling and sprinkle cheese on filling on half  of the tortillas, filling and cheese can be adjusted to your desire just remember you have to flip it on the skillet
  • Fold the other half of tortilla over and with a paper towel smear some olive on one side of tortilla and place that side on heated skillet
  • Smear some olive oil on the side without olive oil and turn quesadilla over with your spatula  once it has browned. Brown the second side
  • Remove from skillet
  • Repeat until done


Serving:

  • Allow quesadilla 5 minutes to rest before cutting or just eat them whole
  • Top with Guacamole.

Ingredients

Guacamole - see Jalapeno popper recipe


1 - Zucchini

1 - Yellow squash

1/2 - Red bell pepper

1/4 Cup yellow onion

3/4  Cup cut corn

1/2 Cup Black beans rinsed  clean

2 Tbs. Hike Up Your Skirt Fajita Rub

2 Tbs. Olive oil


2 Chicken breast

1 Tbs. olive oil


1- 8 ounce package shredded cheddar cheese

1/4 Cup olive iol


1 Dozen flour tortillas

  • Medium bowl
  • Large flat skillet or Teflon pan
  • Spatula
  • Sheet pan
